Often used by those who can't eat wheat, Spelt has a mild nutty flavor. It's also known to have nearly 25% more protein than wheat. Spelt is somewhat similar to Millet. It can be ground and used as a flour substitute or cooked to be eaten as a porridge. Storage Advantage: This product is packaged in a poly bucket which is flushed with Nitrogen. Storing your food in a cool and dry environment along with nitrogen packing insures living organisms can't survive and provides a maximum shelf life. Oxygen absorbers are helpful but they can only absorb a set amount of oxygen before the chemical, used to create the reaction, expires. Nitrogen will remain in the bucket until it is emptied.
